Ingredients
- 6 slices sandwich bread (white or whole wheat)
- 6 slices bacon
- 1/4 cup mayonnaise
- 1 large ripe tomato, sliced
- 4 leaves lettuce (iceberg or romaine)
- 8 ounces sliced roasted turkey or chicken breast
- 2 slices cheddar or Swiss cheese (optional)
- Salt and black pepper, to taste
- Toothpicks, for securing

Cook the bacon in a skillet over medium heat until crisp, 6โ8 minutes, flipping once. Drain on paper towels.

Toast all 6 slices of bread until golden and firm โ sturdy, well-toasted bread is essential here, since it needs to support three layers of filling without going soft and collapsing.

Spread mayonnaise on one side of each slice of toast.

Build the first layer: on one slice, layer lettuce, tomato (seasoned with a pinch of salt and pepper), and half the turkey. Top with a second slice of toast, mayonnaise-side down, then mayonnaise-side up again.

Build the second layer on top: add the remaining turkey, the cheese if using, and the crisp bacon.

Top with the final slice of toast, mayonnaise-side down.

Press down gently but firmly on the sandwich to compact the layers slightly.

Using a long, sharp serrated knife, cut the sandwich diagonally into quarters, cutting all the way through in one smooth motion rather than sawing, which can shove the filling out.

Secure each quarter with a toothpick through the center to hold the layers together, and serve immediately.
Chef's Tip โ Season the tomato slices with a little salt right before assembling โ it draws out excess moisture that would otherwise make the toast soggy.
