Fettuccine Alfredo
A true Roman Alfredo uses no cream at all β just butter, Parmesan, and starchy pasta water emulsified together into a silky sauce.

Ingredients
- 1 pound fresh or dried fettuccine
- 6 tablespoons unsalted butter, cut into pieces
- 1 1/2 cups finely grated Parmesan, plus more for serving
- Salt and black pepper, to taste
- 1/4 teaspoon ground nutmeg (optional)

Bring a large pot of generously salted water to a boil and cook the fettuccine according to package directions until al dente.

Just before draining, reserve at least 1 1/2 cups of the starchy pasta cooking water β you'll need more than you think.

Drain the pasta, reserving the water, and return the pasta to the empty hot pot (off the heat, or over very low heat).

Add the butter and about 1/2 cup of the reserved pasta water to the pasta, tossing continuously with tongs until the butter melts and coats the noodles.

Add the Parmesan a handful at a time, tossing constantly and vigorously between additions, and adding more pasta water as needed, until the cheese fully melts into a smooth, glossy sauce that clings to the noodles. Adding the cheese gradually (rather than all at once) prevents it from clumping into a stringy mess instead of emulsifying.

Continue tossing and adding pasta water in small splashes until the sauce reaches a silky, coating consistency β it should look glossy, not greasy or clumped.

Season with salt, pepper, and nutmeg if using.

Serve immediately in warmed bowls, topped with extra Parmesan and more cracked black pepper.
Chef's Tip β Work off direct heat once the pasta is drained β a real Alfredo emulsion breaks if the pan gets too hot, turning greasy and separated instead of creamy.
