Mediterranean Chickpea Salad

A sturdy, no-lettuce salad that holds up well for meal prep, built on the classic Mediterranean combination of lemon, herbs, and briny cheese.

Ingredients

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup Kalamata olives, halved
  • 4 ounces feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint (optional)
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

    Spread the drained chickpeas on a clean kitchen towel and pat them thoroughly dry — excess moisture on the chickpeas will water down the dressing over time.

    In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and Kalamata olives.

    In a small jar or bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper until emulsified.

    Pour the dressing over the chickpea mixture and toss thoroughly to combine.

    Let the salad sit at room temperature for at least 15 minutes (or refrigerate up to 2 days) to let the chickpeas absorb the dressing's flavor.

    Just before serving, fold in the crumbled feta, parsley, and mint, being careful not to overmix and break up the feta too much.

    Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed, and serve chilled or at room temperature.

Chef's Tip — This salad actually improves after a day in the fridge as the chickpeas soak up more of the lemony dressing — it's an excellent make-ahead option for meal prep or potlucks.
