Moroccan-Spiced Lentil Soup

Inspired by Moroccan harira, this soup layers warm spices with lentils and tomatoes for a soup that's substantial enough to be dinner on its own.

Ingredients

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 1/2 cups dried red or green lentils, rinsed
  • 6 cups (1.4L) vegetable broth
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 tablespoons fresh lemon juice, plus more to taste
  • Salt and black pepper, to taste
  • 1/4 cup chopped fresh cilantro or parsley

Instructions

    Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook, stirring occasionally, until softened, 7–8 minutes.

    Add the garlic and tomato paste and cook, stirring, for 2 minutes.

    Add the cumin, coriander, smoked paprika, cinnamon, and cayenne and toast, stirring constantly, for 30–60 seconds until fragrant.

    Add the crushed tomatoes, rinsed lentils, and vegetable broth. Stir well to combine.

    Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until the lentils are fully tender (red lentils will break down and thicken the soup; green lentils hold their shape more).

    Stir in the chickpeas and simmer, uncovered, 10 minutes more to warm through and let the soup thicken slightly.

    Remove from heat and stir in the lemon juice. Season generously with salt and pepper, adding more lemon juice to taste for brightness.

    Ladle into bowls, garnish with fresh cilantro, and serve hot with warm flatbread.

Chef's Tip — Red lentils cook down into a thick, almost creamy soup, while green or brown lentils stay firmer — use red if you want this closer to a purée, or green/brown if you prefer distinct texture.
