Southwest Quinoa Salad
Rinsing quinoa thoroughly before cooking washes off its natural bitter coating (saponin) β an easy step that makes a real difference in flavor.

Ingredients
- 1 1/2 cups quinoa, rinsed well
- 3 cups (720ml) vegetable broth or water
- 1 (15-ounce) can black beans, drained and rinsed
- 1 1/2 cups corn kernels (fresh, frozen and thawed, or grilled)
- 1 red bell pepper, diced
- 1/2 red onion, finely diced
- 1 jalapeΓ±o, seeded and minced (optional)
- 1/2 cup chopped fresh cilantro
- 1 avocado, diced
- 1/3 cup olive oil
- 1/4 cup fresh lime juice (about 2β3 limes)
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 garlic clove, minced
- Salt and black pepper, to taste

Combine the rinsed quinoa and broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, until the liquid is absorbed and the grains have released their little white spiral tails.

Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork. Spread on a baking sheet to cool to room temperature β this prevents the salad from steaming itself soggy once assembled.

While the quinoa cools, whisk together the olive oil, lime juice, cumin, chili powder, garlic, salt, and pepper in a small bowl to make the dressing.

In a large bowl, combine the cooled quinoa, black beans, corn, bell pepper, red onion, and jalapeΓ±o if using.

Pour the dressing over the salad and toss well to combine.

Taste and adjust seasoning with more salt, lime juice, or chili powder as needed. This salad benefits from a bold hand with the acid.

Just before serving, gently fold in the diced avocado and cilantro, being careful not to mash the avocado.

Serve at room temperature or chilled.
Chef's Tip β Add the avocado only right before serving β mixed in ahead of time, it breaks down and turns the whole salad an unappetizing green-brown by the next day.
