Chicken Caesar Wrap

Warming the tortilla briefly before rolling keeps it pliable enough to wrap tightly without cracking down the middle.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 4 large flour tortillas
  • 3 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan, plus more for serving
  • 1/2 cup Caesar dressing (homemade or store-bought)
  • 1/2 cup croutons, roughly crushed

Instructions

    Season the chicken breast generously with salt and pepper on both sides.

    Heat the olive oil in a skillet over medium heat. Cook the chicken for 6–7 minutes per side, until golden and cooked through (165°F internal temperature).

    Transfer to a cutting board and let rest for 5 minutes, then slice thinly against the grain.

    In a large bowl, toss the chopped romaine with the Caesar dressing and Parmesan until well coated.

    Warm each tortilla for about 15–20 seconds per side in a dry skillet or for 10 seconds in the microwave wrapped in a damp paper towel — this makes the tortilla more pliable and less likely to tear or crack when rolled.

    Lay a warmed tortilla flat and place a portion of the dressed lettuce mixture slightly below the center, leaving room at the bottom and sides to fold.

    Top with a portion of the sliced chicken and a sprinkle of crushed croutons.

    Fold in the sides of the tortilla, then roll tightly from the bottom up, tucking the filling in as you go to keep it compact.

    Slice each wrap in half on a diagonal and serve immediately.

Chef's Tip — Keep the dressed lettuce and any wet ingredients slightly below the center of the tortilla, not spread edge to edge — this makes it far easier to fold the sides in without filling spilling out.
